Estamos en la Cava “Vino de México” en uno de los grandes sitios turísticos de Cancún: Xcaret. Como todas las buenas cavas del mundo, es un espacio subterráneo, cuya frescura ayuda a la conservación de los vinos. El espacio es tan acogedor que hasta por momentos se olvida que afuera está una hermosa selva y un sinfín de actividades acuáticas, un mariposario, un acuario…
Nuestro guía es Carlos Miramontes, un joven sommelier que nos va platicando la historia del vino en México y de cómo cada vez más se busca hacerle un espacio entre la ya de por sí variada gastronomía mexicana, que es Patrimonio de la Humanidad, de acuerdo con la UNESCO -¡y millones de paladares en el mundo! Definitivamente, saborear las delicias mexicanas es una de las mejores actividades en Xcaret.
Carlos nos platica de uno de los platillos de la gastronomía mexicana que más controversia ha causado para maridar con vino: el mole. “Desde mi perspectiva, el mole es el platillo representativo de la diversidad de que caracteriza a la gastronomía mexicana. Varios estados del país tienen su propia versión de mole: Hidalgo, Oaxaca, Puebla… El mole es una mezcla de sabores, pues contiene por lo menos 20 ingredientes: chocolate, pepita, tortilla, especias… Por esta variedad de sabores que contiene el mole, es necesario maridarlo con un vino que también sea profundo y e intenso”.
En la actividad de sitios turísticos de Cancún, degustación en la Cava de Xcaret, existe un platillo que nada más de escucharlo, se antoja como la experiencia gastronómica entre tantas actividades que hay en la Riviera Maya: medallones de magret de pato bañados en mole negro de Oaxaca servido con rodajas de plátano macho frito y hojuelas de cebolla cambray desflemadas. Se marida con un Nebbiolo Reserva Privada 2005. “Este plato está pensado para destacar los sabores fuertes del pato, ave de caza de carne magra y sabor fuerte, con el mole negro, hecho de múltiples ingredientes.
“El mole en sí es un plato completo y al acompañarse con este vino, se resaltan los sabores que cada uno ofrece. Pasa con gran naturalidad de lo dulce a lo especiado, de lo ahumado, al sabor del chocolate”.
Para maridar con el mole, el sommelier de Xcaret también recomienda los vinos Casa Grande Gran Reserva Cabernet – Shiraz, Casa Madero; Xaloc Tempranillo, Santo Tomás; Del Viko, Vinícola Torres Alegre y Familia, o el Icaro 2008, Sinergi VT. Todos estos vinos se encuentran en la Cava “Vino de México” de Xcaret, que por mostrar y promover únicamente vinos mexicanos, es considerada la Embajada del Vino mexicano en la Riviera Maya.

@jmfry I listened to Noble Beast for a month straight then never returned. I had a similar experience you had with the Avetts, once I started listening to that I was back revisiting his older albums on the regular. Its a good record I had a hard time leaving that and M.
